I am a huge, huge, H-U-G-E fan of cucumbers! I eat AT LEAST one a day. The Boyfriend will tell you, as much as I eat, I should turn into a cucumber one of these days. LOL!!! Whelp, it's Summer time here in New Jersey and it's been sweltering hot. I don't know about you but when the weather gets like this my body just craves sweet, sweet Summer foods -- and they are all primarily that of the vegetable kind. ;) As I was cleaning out my fridge last night I realized I had a few Jersey tomatoes (love them!) to use up before they went bad. It really drives me bananas when food is wasted. I also knew I wanted my daily dose of cucumber. That's when I remembered about that good old fashioned Cucumber and Tomato salad that my Momma raised me on. So, I started cutting up my cucumbers and tomatoes. The best part? It's a FABULO-SO side dish. This is great for parties or potlucks as well. Healthy, filling, and quick... my kind of side dish.
- 2 Cucumbers
- 2 cups of cherry tomatoes (or other tomatoes)
- 1/2 onion chopped (optional)
- 1/2 avocado cubed (optional)
Vinaigrette
- 1/4 cup of vinegar
- 1 tbsp of vegannaise (or lite mayo)
- cracked pepper to top
Directions:
- Ready for this...chop and combine <Rocket science, I know!>
- Vinaigrette: Wisk all 3 ingredients together.
- Combine and toss. Chill before serving.

Dinner for 2. Served. 2 reds, 2 greens. 1 tsp. |
Easy enough right?! This will be on the menu next week. :D Gotta get it in while cucumbers and tomatoes are in season and in their peak.
